ISSUE 009 — the Copenhagen culinary scene issue — looks at a food culture emancipated from the dogma of New Nordic, encompassing a diverse community whose practices challenge the way things have always been done.
From growers to the people cooking and serving their produce, those bringing about systematic change or creating an aesthetic framework for sustenance, the talents featured in this issue all speak to a sense of coherence and community, welcoming cross-cultural and disciplinary collaboration where previous generations have hoarded agency, knowledge and power.
Copenhagen’s abundant culinary scene and high quality of life has long attracted some of the world’s finest talent in food, hospitality and of course, design. The pandemic spurred many to reevaluate their standing in the industry, with an onset of professionals opening their own businesses, ripe to go their own way.
Right now, the city is teeming with new perspectives on food, drink and hospitality, diverse across format, scale and discipline. What binds them is a shared network that transcends the traditional culinary scene, a space for opportunity to intertwine, to thrive and grow together.
